Coffee Houses really no longer exist! I feel sorry for anybody that isn't old enough to remember real Coffee Houses; The places that were not commercial ventures and thus, did not survive very long after the early 1970's. These were places that just had coffee and music (and drugs, sex, etc.). They weren't selling books, handmade breads or pastry. It was where the "Street People" would gather with the college students without any animosity or hostility. Now we call them "Homeless People" and college students for the most part ignore them, hoping they'll go away! Those were better days!
Would "Exit" and "La Gallette" be accurate examples of the "Coffee Houses" you have in mind, John Bethke?
